Kaiserschmarrn - sugared pancake with raisins

Probably the best in the entire five-lakes district! Original Austrian Kaiserschmarrn, with raisins and almonds. Tastes the most delicious with homemade stewed apples. Below is our not so secret recipe how to prepare a perfect Kaiserschmarrn - enjoy!

Step 1
Preheat the oven to 220C.

Step 2
125g flour
1 pinch salt
1 pinch vanilla sugar (preferably homemade, if possible with bourbon vanilla)
ca. 150ml milk
  stir the mixture with a whisk until it is smooth

Step 3
3 complete eggs
1 egg yolk
  add to the mixture and stir powerfully

Step 4
Heat the pan and put a good piece of butter in it. We in The Post use clarified butter for that.

Put mixture into the pan and sprinkle as many raisins and almonds over as you like.

As soon as the dough is golden brown and thickened on top, you turn it around and let it bake until light brown. Now put the pan in the preheated oven. Alternatively you can put the Schmarrn into a baking dish together with a small piece of "real butter". Let the dough rise in the oven for about 6-9 minutes.

In the meantime add 3-4 tablespoons of sugar into a pan. On a middle heat liquid caramel will evolve.

Remove pan/baking dish from the oven. Don't forget to use oven cloths.

Tear the Kaiserschmarrn to bits (preferably with two wooden spoons). Thereafter add the Schmarrn into the pan with the caramel, toss everything nicely (the usage of the wooden spoons is very helpful) and arrange the Schmarrn on a large plate/pan.

Coat the Kaiserschmarrn gently with powdered sugar and serve everything with stewed apples.
