Basil-Post-Pesto

G7-Summit and lots of hungry policemen... Al dente spaghetti and a homemade pesto... We want to make our guests happy.

100g pine nuts
4-10 garlic cloves (depending on one's own taste I take only 4)
150g4 years old Parmesan (shredded)
100g basil
150ml very good olive oil
salt, pepper, chilli

I'm in the happy position to own a Thermomix, that's why I write here a Thermomix instruction, but all those who don't have such magic machine, I can assure, use any common mixer or hand blender, trust in your skills and taste and the pesto will taste equally heavenly!

Pine nuts, garlic, Parmesan about 20 seconds at level 10.

Add basil and about 12 seconds at level 10.

Season.

Add olive oil and mix again at level 3 (gentle stir) for about 5-10 seconds.

In the meantime, you hopefully managed to cook the noodles al dente.

It is important to pre-heat the pasta plates.

Freshly cooked noodles (please cook them in plenty of salt water, because the taste the noodles get while boiling cannot be achieved after).

Pour the noodles in a sieve, let them drain and put them on the pre-heated pasta plates. Depending on taste, place some pesto in middle, a small piece of butter in the middle and then serve.

For me this is a simple dish which excites everybody and in case there is some pesto left over - simply fill it into a preserving jar and store it in the fridge. The pesto will taste good later as well.
